Friday night, the family had come over for woodfired pizzas next to the fire pit. We needed a wine to share and the temptation beat me, so I opened the [Tobin Wines Elliot Merlot 2023](https://volary.com.au/tobin-elliot-merlot-2023/).

In my mind I had that bottle down to cellar for a couple more years. The tasting note I wrote says two to five years and I still think that is right and it will develop nicely. Tertiary flavours would have come through and the wine would have been better for the wait. Although true, I don't think this is the be all and end all of cellaring wine. It's best to ask yourself the question of how you enjoy wine the most and what that moment looks like to you.

People with a cellar or a wine fridge wait for the wine to age to perfection, but you can never really know. I think instead we should change our perspective to focus and be conscious of great moments to have wine when they come up. I find people who wait too long to age their wine end up without enough moments to enjoy them.

So take the moment when it is there, the memory will surpass the additional development of the wine. I had the Tobin young and I enjoyed it anyway. Whatever the extra years would have done to it, I will leave as a mystery of the universe.
